Pan de Ube

Recently a client informed me of an Filipino pastry called Pan de Ube. It is a soft bread with a sweet purple yam filling and it is amazing!

At first glance I thought it was red bean curd. I've had pastries of this kind and have purchased them in Japanese Markets on occasion.

But as you can see the yam in the middle is a distinct purple. So, bright and purple that it frightened me a little when I first saw it. It's very pretty but I had no idea what it was.

I found a bakery that sells this pastry and I will be stocking up!
